Fran and Tony decided to have the majority of their engagement session take place where they love spending time together: the kitchen! Over the course of the session, they cooked up a storm and taught me two of their specialties. Tony whipped up his family’s homemade gnocchi, and Fran topped the meal off with a delicious blueberry cobbler. It was a blast to photograph these two work together in the kitchen, and somehow they must have known that food was the fastest way into this photographer’s heart…Please enjoy Fran and Tony’s recipes (below) and spread the love with some homemade cookin’ of your own!

Tony’s Gnocchi (6 servings):

  • 2-medium-sized peeled potatoes
  • 1/2 cup milk
  • 5 tablespoons butter
  • 1 1/2 – 2 cups flour
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 3 tablesppons grated Parmesan cheese

Boil potatoes, then put through a ricer. Potatoes must be freshly cooked and used at once.

Heat milk and butter to the boiling point. Then stir flour into milk and butter mixture, until the dough forms a ball.

Remove from heat and beat in eggs, salt, paprika, cheese and potatoes. Sprinkle dough with flour.

Roll dough into sticks 1/2 inch think. Then cut sticks into 1-inch dumplings.

Drop the gnocchi into simmering salted water and let cook 3-5 minutes or until you see the gnocchi raise to the surface.

Mix in with delicious homemade sauce and enjoy!

 

Fran’s Blueberry Cobbler:

  • 2/3 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup skim milk
  • 2 tablespoons butter or margarine, melted
  • 2 cups fresh blueberries, washed

In a medium bowl, combine flour, sugar, baking powder and salt. Stir in milk, mix batter until smooth.

Pour melted butter or margarine into a 1- or 1 1/2-quart casserole-type baking dish. Pour in batter and sprinkle blueberries on top.

Bake the cobbler in a preheated 350 degrees oven for 40-45 minutes or until lightly browned. Spoon out and enjoy!
